Arriving in Orange you will check into your accommodation before taking the short (15 minute) drive to Canobolas-Smith Wines. Here your vineyard and winery experience will really begin. You will be taken on a brief tour of the vineyard and given an introduction to cool climate viticulture ? look at vine varieties, pruning styles and the pursuit of excellence on the 20 acre vineyard. Moving to the Canobolas-Smith Winery, winemaker Murray Smith (or assistant winemaker Justin Byrne) will walk you through the winemaking process. Learn about crushing, pressing, fermenting, barrel aging and other winemaking techniques. Taste for yourself the difference between a barrel fermented wine and a tank fermented wine. Learn about the impact of oak ? is French oak different to American oak? Taste for yourself. The winemaking elements of this part of the experience can be tailored to the level of technical interest. Round off the experience with a tasting of selected wines from the Cellar Door. You won?t leave a winemaker but you will have a good understanding of the winemaking process ? from vine to wine at a friendly, informative, quality focussed winery.
Driving back to town you can take in some sights or simply return to your quality accommodation.
